Fast chicken and bacon bowl

I love this recipe for two reasons. 1. Anything with sweet potatoes is pretty much a winner in my book. 2. It is super easy and super fast which is what I am looking for in my meals since I am pretty much useless in the kitchen post WOD.


-½ sweet potato or yam, cut lengthwise
-Rotisserie chicken, I usuallly cut off the breast meat and shred it
-2 slices of bacon
-salt and pepper, to taste


Preheat oven to 400 degrees.
Place your halved sweet potato cut-side down on a baking sheet and bake for 20-25 minutes or until your sweet potato is soft to the touch.
When your sweet potato has about 6-8 minutes left to cook, place a medium skillet over medium heat.
Add your two slices of bacon.
Salt and pepper your chicken.
As soon as the bacon is done cooking, toss in the chicken to heat it up and to soak up some of the yummy bacon goodness.
Place sweet potato (peeled) in a bowl and top with the bacony chicken mix.
Grab a fork, mix it all together and go to town!
Top with a pinch of salt and pepper.
